Curried Pork Satays

Tasty and tender pork satays.

Very easy to prepare and can be enjoyed as a main meal or seve it as a snack with our delicious peanut sauce.

Cooking Time: 40-50 minutes | Serves: Makes 12 satay skewers | Grill Basting | Seasoning Salt

Ingredients

Marinade:

45ml (3 Tbsp) cooking oil

3 cloves garlic, crushed

10ml (2 tsp) ginger, chopped

15ml (1 Tbsp) medium curry powder

15ml (1 Tbsp) smooth apricot jam

80ml (1/3 cup) Spur Basting Sauce

30ml (2 Tbsp) light brown sugar

45ml (3 Tbsp) brown vinegar

2 bay leaves

5ml (1 tsp) Spur Meat Spice

Add freshly ground black pepper to taste

500g pork, cut into 2cm cubes

1 onion, cut into 2cm pieces

150g dried Turkish apricots

12 wooden or bamboo skewers

 

Sauce:

200ml (3/4 cups) coconut milk

60ml (1/4 cups) crunchy peanut butter

15ml (1 Tbsp) fresh lemon juice

3ml (1/2 tsp) Spur Seasoning Salt

Add freshly ground black pepper to taste


Instructions

  1. Marinade: Heat the cooking oil in a heavy-based saucepan and sauté the garlic and ginger. Add the curry powder and fry for about 2 minutes.
  2. Add the apricot jam, Spur Basting Sauce, sugar, vinegar, bay leaves and seasonings. Simmer over low heat for about 5 minutes. Remove from the heat and leave to cool.
  3. Thread the pork cubes, onion pieces and apricots alternatively onto skewers. Pour marinade over and leave to marinate for about 6 hours or overnight in the fridge.
  4. Place satays over moderate coals for about 10 minutes for each side or under oven grill, turning and brushing with marinade until cooked through.
  5. Sauce: Mix all ingredients in a pan. Bring to the boil and simmer for 3 minutes. Serve with the cooked satays.

Variations

The pork can be substituted with beef, chicken or lamb.


Cooking Tip

Turkish apricots are softer and therefore suitable for grilling. Everyday apricots are likely to dry out or burn when grilled.

You know this dish reminds me of a Greek dish that's siiamlr. And I don't blame dad for wanting to grill. I have wanted some BBQ for awhile now and I am getting anxious over here lol. And don't start telling me about shrimp on the barbie when I am hungry Kristy LOL. Honestly, I really enjoy coming to your blog everyday.. wonderful as always.
