Moreish Spinach Salad
Healthy Spinach Salad with Spur Salad & French Fry Dressing.
45ml (3tbsp) olive oil
1 medium onion, chopped
100g button mushrooms, sliced
200g spinach leaves, coarsely chopped
30g bean sprouts
2 extra-large eggs, hard-boiled and chopped (optional)
100ml Spur Salad & French Fry dressing
10ml (2tsp) Worcestershire sauce
Add freshly ground black pepper to taste
- Heat oil in a heavy-based saucepan and sauté onion for a few minutes until soft. Add mushrooms and sauté until soft. Add the warm mixture to the spinach.
- Dressing: Mix the Spur Salad & French Fry Dressing, Worcestershire sauce and pepper together and fold into spinach.
- Spoon into a serving dish.
- Top with bean sprouts and chopped eggs.
- Serve immediately.
Substitute the bean sprouts with chickpeas, croutons or chopped nuts of your choice.
Add dressing just before serving to prevent the leaves from becoming soggy.
