Sweet and Sour Tuna Wraps
Sweet and Sour healthy meal.
30ml (2 Tbsp) olive oil
1 small onion, finely chopped
5 PEPPADEW Peppers, coarsely chopped
2 x 170g cans solid tuna, drained and flaked
4 (60g) gherkins, sliced
15ml (1 Tbsp) fresh mixed herbs, chopped or 5 ml (1 tsp) dried herbs
8ml (1 1/2 tsp) grated lemon rind, optional
80ml (1/3 cup) Sour Salad Dressing
80ml (1/3 cup) Sweet Chilli Sauce
125ml (1/2 cup) grated Cheddar cheese 5ml (1 tsp) Spur Seasoning Salt
Add freshly ground black pepper to taste
8 flour torilla wraps
- Heat oil in a heavy-based saucepan. Saute the onion for a few minutes until soft. Add PEPPADEW Peppers, heat lightly and remove from heat. Leave to cool for a few minutes.
- Add the remaining ingredients and mix all together.
- Heat wraps lightly in microwave or oven if preferred. Spoon filling onto tortilla wraps and roll up to close.
- After rolling the wraps, insert skewers and cut into sections.
- Serve immediately.
Substitute the tuna with canned salmon or smoked chicken.
Spice up the fun, get the kids to help. Great for a picnic!
